I am so excited to share this recipe with you today! It was such a crowd pleaser and my kids loved it! I was able to sneak in some veggies and we had this for dinner instead of breakfast.
So here is how you make it....
You will need 8 eggs (depending on how many people you are feeding... I do 2 eggs per person) & what ever vegetables you love!
I used Mushrooms, Zucchini, Chives, Ham, Red Onion, and of course... CHEESE!
I grease my pan with Coconut Oil and then add my eggs and vegetables to the pan...
Then I stir it all together...
and cook the bottom for 5 minutes while covered.
Then I carefully turn the Omelet out onto a big plate and then slide the Omelet into the pan, uncooked side down. It isn't easy but I have found it to be the best way without completely tearing up the whole omlette. Cook for another 5 to 8 minutes covered until all of the egg is cooked and the vegetables are tender.
It is so good and the vegetables give it such a good flavor! I served mine with tomatoes and fresh pineapple.
